I think it was more of a braised salmon than a poach since I didn’t submerge the fish in the cooking liquid. The topping on the salmon is a herb vinaigrette (tarragon and parsley). I pan roasted the asparagus and did the carrots potatoes and shallots in the oven.

First attempt at real Maryland Crabcakes. Used jumbo lump crab with scallions, parsley, and of course, Old Bay. Served with a side of freshly made tartar sauce and a nice green salad. They held together pretty well and tasted great.
