I think it was more of a braised salmon than a poach since I didn’t submerge the fish in the cooking liquid. The topping on the salmon is a herb vinaigrette (tarragon and parsley). I pan roasted the asparagus and did the carrots potatoes and shallots in the oven.
Overall, I was happy that everything came out well and I didn’t burn anything. I’m still geting used to cooking three things at once. I would have liked some more crust on the oven roasted veggies, but they still tasted good. For the fish, I definitely prefer pan seared or broiled though.
